Holding a degree in culinary arts from the Institut Paul Bocuse in Lyon France. Chef Marco trained in top kitchens around the world including Michelin star Trois Domes and L’Alexandrin in Lyon, as well as Via Veneto in Barcelona. His highest accolade was being part of the team to win 3 Michelin Stars in Massimiliano Alajmo’s Ristorante Le Calandre in Rubano.
Before settling in Austin where his family roots reeled him in, chef Marco was the principle in the development of several of his own concepts in Mexico and US. He also led projects and all aspects of start-ups including restaurant ‘rescue’ which took him to all four the corners of the US. A long track record of fixing operations include The Modern hotel in Honolulu, The Boxer hotel in Boston, The Plaza hotel in El Paso and the iconic Stanley Hotel in Estes Park among others.
With extensive domestic and international experience, chef Marco presents Ze Crepes, where he showcases culinary gems, techniques and recipes that he picked up and mastered along his 20 year career and renders homage to the true french crepe in a creative yet simple way.
